Basil & Kasundi Filled Chicken Wheels with Burani Raitaby Tejasvi Arneja

This recipe is a perfect blend of Continental and Indian cuisines; we combine chicken breasts that have been filled with tangy filling of achar and kasundi combined with basil. The chicken is then rolled and pan seared to lock in the flavors, and served with traditional burani raita

INGREDIENTSPortion for 2

    4 Chicken Breasts
    1 tbsp Red Chilli Paste
    1.5 tbsp Butter
    2 tbsp Olive Oil
    2 tbsp Vegetable Oil for Raita
    24 Basil Leaves
    2 tbsp Kasundi
    4 tbsp Garlic for Raita
    4 Strings of Green Onions
    1 tbsp Thyme
    1 tbsp Garlic for Chicken
    1 Cup Curd
    1 tbsp Achar Ka Masala
    1 Garlic Bread Loaf.

      Flatten the Chicken Breasts Take the chicken breasts out and drain to remove excess water. Using the back of a wooden ladle (karchi) beat the breasts and flatten them thin about 1/4 inch. This is essential as it would be easy to roll and they would cook evenly


      Apply filling on Chicken Breasts Apply salt and pepper to taste on the breasts, evenly apply chilli paste and achar on the 4 pieces and cover each breast with 6 basil leaves. Apply kasundi evenly on 4 chicken breasts over top of basil leaves.


      Roll Breasts into Wheels Roll the filled breasts into wheels and tie each of them with a string of scallion, (Use one knot only)


      Cook Chicken Wheels In a wide non-stick pan heat olive oil and butter on low heat, add garlic and thyme when the butter melts and cook for 30 seconds. Add the chicken breast wheels cover and cook for 4 minutes, remove the cover and flip the side, add 2 tbsp (30 ml) of water, cook for 3 minutes. We will use the remaining juices left in the pan, don't throw them.


      Fry Garlic For Raita While chicken cooks, in a small frying pan heat vegetable oil until it?s hot. Add garlic and fry until golden brown, drain excess oil in a tissue paper


      Make Burani Raita & Serve with Chicken Wheels In a bowl whisk curd with salt and pepper, add fried garlic and mix well. Slice the chicken wheels into slices and pour the remaining juices on top. Serve with buranii raita and garlic bread.
