Beetroot, Green Apples and Goat Cheese Burgersby Tejasvi Arneja

Traditional burgers are made with ham, but in our gourmet, vegetarian version, we're using cooked, marinated beet slices in lieu of meat patties. Luscious goat cheese, crisp, tart apple slices and fresh mint make these beet sliders a non-traditional and satisfying meal.

    250 gms Boiled Potatoes
    130 gms Beetroot
    4 Slices Green Apple
    2 tbsp Basil Leaves
    2 tbsb Mint Leaves
    4 Romaine Lettuce Leaves
    4 tbsp Goat Cheese
    1 tsp Sherry Vinegar
    4 Onion Slices
    1 tsp Paprika Powder
    1 tbsp Olive Oil
    1 tbsp Flour
    2 tsp Chat Masala
    1 Lemon
    2 tbsp Dijon Mustard
    4 Cherry Tomatoes
    4 Toothpics

      Remove and Drain Beetroot Remove beetroot from the packaging and transfer to a bowl, remove excess water, this is important for consistency of burger patty.


      Create Patty Mixture In the same bowl, where beetroot was drained, add potatoes, sherry vinegar, chat masala flour, salt and pepper to taste. Mash the mixture by hand until all the ingredients have combined well.


      Form Patties Divide the beetroot and potato mixture into 4 parts, flatten each part into a thick patty.


      Cook Beetroot Patties In a wide non-stick pan heat olive oil over low ? medium flame, place the beetroot patties and cook them for 5 minutes on each side (10 minutes in total) . You will see a nice crust developing ion top. Switch off heat and keep aside


      Cook Green Apples In the same non-stick pan used for cooking patties, place green apples, sprinkle each side with paprika powder, salt and pepper to taste and cook each side for 10 seconds. Remove and keep aside.


      Warm the Burger Buns and Serve Split the burger buns in middle with a knife and cook each side for 20 seconds. Remove and keep aside. To assemble on the bottom half of the burger bun, put one romaine lettuce leaf, followed by cooked beetroot patty, then goat cheese, cooked green apple, onion slice, basil and mint. Squeeze lemon juice on top. (bottom burger ->romaine lettuce->beetroot patty->green apple->onion->basil->mint->lemon juice) Inside the top half of the burger, spread dijon mustard. Close the burger with a cherry tomato on top.
