INGREDIENTSPortion for 2

    1 tbsp butter
    1 tbsp olive oil
    3 cloves garlic, finely chopped
    2 tsp Cajun seasoning
    200 gms shrimps, peeled and deveined
    1/4 tsp black pepper
    1/4 tsp salt
    2 tomatoes chopped
    4 scallions chopped
    2 tbsp parsley
    Lemon wedges for serving
    1 cup rice, to be cooked

      Prepare white rice Rinse off rice under water to remove starch. Take 3 cups (750 ml) of water in an open pan and bring water to the boil. When water has come to the boil stir in rice, along with salt and bring it back to a gentle simmer. Cover the pan with a lid and cook for 12-15 minutes under low flame. Keep rice a little undone, as they would be cooked later with shrimps. Drain excessive water.


      Heat butter and garlic for shrimps In a non stick pan, heat butter, olive oil and garlic over medium-high heat until fragrant, for about 1 minute.


      Add Cajun seasoning, Shrimps Add Cajun seasoning and shrimps and cook, stirring, until shrimps begin to curl for about 1 minute. Season with salt and pepper.


      Add tomatoes and scallions Add tomatoes and scallions to shrimps and cook, stirring for 2 minutes.


      Add Rice to shrimp preparation Add prepared rice along with 1/4 cup (60 ml) water and continue to cook until rice is warmed through and shrimps are opaque, about 2-3 minutes. Stir in parsley and switch off heat. Serve with lemon.
