Since tomatoes are such a large part of Italian cooking, pomodoro or pomodori (the plural form) is a common term used to dishes with tomatoes. As for examples, pomodori al forno is a recipe for tomatoes with garlic, al pomodoro means 'with tomato', pomodori secchi refers to sun-dried tomatoes, and pomodoro sauce refers to a tomato sauce.

    1.25 cup Gnocchi

    For Sauce
    3 tbsp olive oil
    1 tbsp chopped garlic
    200 gms de skinned, deseeded and diced tomatoes
    1/4 cup tomato puree
    1 tsp red chilly flakes
    1 tsp italian seasoning
    10 basil leaves
    1/2 cup mozzarella cheese cut into small chunks
    2 tbsp grated parmesan
    2 tbsp ricotta cheese
    1/4 cup creme
    Garlic bread

      Boil Gnocchi To 1.5 liters of water in a saucepan add 1.5 tsp of salt. Add Gnocchi and cook for about 2 minutes. Gnocchi will rise to the top when cooked.


      Start with pomodoro sauce In a non-stick pan, heat olive oil over medium heat. Stir in garlic and cook for about 1 minute until softened and fragrant.


      Add tomatoes and herbs Pour in diced tomatoes; red chilly flakes and Italian seasoning cook for 2-3 minutes


      Add Tomato Puree to sauce Add tomato puree to it. Cook for another 3 minutes over medium high heat and add shredded basil, and season with salt and pepper.


      Stir in mozzarella, parmesan and ricotta While sauce is simmering, stir in mozzarella, parmesan and ricotta into the sauce for 2 minutes and allow the heat of sauce to soften, but not melt the cheese.


      Add creme to sauce and serve Add creme to the sauce and stir for 30 seconds, switch off heat. To serve place-cooked gnocchi in a bowl, add sauce over top. Garnish with basil and serve with garlic bread.
