    400 gms Chicken Breast
    2 Green Tomatoes
    1 tbsp Soy Sauce for Chicken
    1 tbsp Soy Sauce for Peanut Sauce
    2 tbsp Cilantro for Tomatoes
    2 tbsp Cilantro for Garnish
    1 Onion Sliced
    1 Cup Jasmine Rice
    2 tbsp Rice Vinegar
    1 tbsp Sesame Oil for Tomatoes
    1 tbsp Sesame Oil for Peanut Sauce
    2 tbsp Mirin
    1/4 Cup Peanut Butter
    12 Wooden Skewers
    2 tsp Olive Oil

      Cook Jasmine Rice Rinse the rice under cold water to remove starch. Put rice in to a sauce pan with 2 cups of water over high heat, Leave the saucepan uncovered, stirring occasionally as water begins to boil Stir in the rice one more time, scraping the bottom and turn heat to low. Cover the sauce pan and let it cook for 18 to 22 minutes. Rice is cooked when small dimples appear at the top of rice.

      Marinate Chicken While the rice cooks, In a large bowl combine chicken with soy sauce, toss to thoroughly coat. Skewer 1 chicken piece in each skewer (you may have extra skewers) and set aside for 5 minutes.

      Marinate Tomatoes In a medium bowl, combine tomatoes, rice vinegar, red onion, sesame oil and cilantro. Add salt and pepper to taste, toss and coat the tomatoes. Set aside to marinate.

      Cook the Chicken In a large non-stick pan heat olive oil on medium-high heat. Add the skewered chicken and cook for 3 to 4 minutes on each side (6 to 8 minutes in total) until browned through and cooked through In case you have a small non-stick pan, you can cook the skewered chicken in batches.

      Make Peanut Sauce While chicken cooks, in a medium bowl combine peanut butter, mirin, soy sauce and sesame oil. Add 3 tbsp (45 ml) water and using a whisker mix all ingredients well.

      For Final Plating Divide the jasmine rice and marinated tomatoes between 2 plates. Place chicken skewers on top of rice and garnish with cilantro. Serve with peanut sauce.
