Chicken Yakitori with Brown Rice and Long Beansby Cook Gourmet

The word Yakitori in Japanese directly translates to grilled (yaki) and chicken (tori). This recipe uses a mixture similar to tsukune, or chicken meatballs, that can be grilled like yakitori, or roasted in oven. Our version is on a stove and gives the same authentic taste. It's a dinner recipe that is popular in Japan and can be enjoyed by calling friends over

    3/4 cup Brown Rice
    2tbsp Scallions
    1 tsp Garlic
    1 tsp Ginger
    2 tbsp Cilantro for Chicken
    2 tbsp Cilantro for Beans
    75 gms French Beans
    1.5 tbsp Hoisin Sauce for Glaze
    1.5 tbsp Hoisin Sauce for Chicken
    1 tbsp Soy Sauce for Glaze
    1 tbsp Soy Sauce for Chicken
    250 gms Chicken Mince
    1/2 Cup Panko Bread Crumbs
    1 tbsp Sesame Oil
    8 Bamboo Skewers
    2 Bird Eye Chilis
    1 Lemon
    1 tbsp Olive Oil for Chicken
    1 tsp Olive Oil for Beans

      Cook Brown Rice Rinse rice under water to remove starch. Take 3 cups (750 ml) of water in an open pan and bring water to the boil. When water has come to the boil stir in rice, along with salt and bring it back to a gentle simmer Cover the pan with a lid and cook for 15-18 minutes under low flame. Drain excess water and keep aside.

      Make Glaze While the rice cooks, in a small bowl combine hoisin and soy sauce. Mix well and keep aside for final plating.

      Make Chicken Patties In a large bowl combine chicken mince with panko bread crumbs, sesame oil, ginger, garlic, scallions, cilantro, hoisin sauce and soy sauce. Mix well with your hands. Divide the mixture into 4 equal parts, and shape them into flat, oval-shaped-patties. Place 2 skewers in each patty.

      Pan Sear Chicken Patties In a non-stick pan heat olive oil over medium-high heat and place chicken patties with skewers. Cook for 3 to 4 minutes on each side. (6 to 8 minutes in total) The patties will be browned on the top when cooked. Switch off heat and keep aside. This is your chicken yakitori.

      Cook Beans Wipe clean the non-stick pan used for preparing patties. Heat olive oil on high flame until hot. Add french beans and whole bird eye chilis and cook for 30 seconds. Add salt and pepper to taste. Add 1/4 cup (60 ml) of water and cook for 3 to 4 minutes, stirring until water evaporates and beans are crisp-tender. Remove from heat, add lemon juice (half a lemon) and cilantro over beans.

      For Final Plating Divide the rice and beans between 2 serving plates. Place chicken yakitori on top of the rice, spoon some glaze over yakitori and french beans. Garnish with lemon wedges from the remaining half lemon piece.
