Fettuccine with Artichoke and Fresh Tomato Sauceby Cook Gourmet

We at Cook Gourmet ran up Fettuccine to a small dinner party, it soon became apparent that it's fate was to be wrapped into a pasta. It was to be Fettuccine of some kind and we came up with tomato and artichoke.

    Fettuccine Pasta
    Salt for Pasta
    Olive oil
    Tomatoes chopped
    Artichoke
    Green onions chopped
    Garlic crushed
    Parmesan cheese
    Tomato puree
    Red chilly flakes
    Oregano

      Boil Fettuccine Pasta Add fettuccine pasta to 3 liters of boiling water in a large saucepan along with 1 tbsp of salt and stir delicately. Cook the pasta for 5 minutes by then pasta would have unraveled themselves. Drain off excess water and keep aside

      Prepare Sauce In a non -stick pan, heat olive oil over medium high heat and add garlic and fry for 1 minute until it softens. Add tomatoes and cook for 4 minutes until they are mashed.

      Add Tomato Puree and Artichoke to sauce Add tomato puree, artichokes, green onions, oregano, chilly flakes, salt and pepper. Cook for 2-3 minutes, stirring occasionally, until vegetables are warmed through.

      Add Fettuccine Pasta to Sauce Add fettuccine pasta to sauce and toss gently for 1-2 minutes. Switch off heat

      Garnish with Parmesan Cheese and Serve Transfer pasta with sauce to a serving bowl and garnish with parmesan cheese
