Fish Tagine with Saffron & Almonds with Khuboos (Arabic Bread)by Cook Gourmet

    350 gms Basa Fish
    1 tbsp Olive Oil
    1/2 Onion Chopped
    Saffron Pinch
    2 tsp Chicken Aromata Powder
    1 tsp Garlic Chopped
    1 tsp Ginger Chopped
    1/2 Green Chilli
    1/2 Green Chilli
    Spice Mix (1 tsp Cumin, 1/2 tsp Coriander, 1/2 tsp Cinnamon)
    1 tbsp Tomato Puree
    5 Cherry Tomatoes
    1 tbsp Almonds Ground
    Zest of 1/2 Orange
    Juice of 1/2 Orange
    1 tsp Honey
    2 tbsp Chopped Coriander
    2 tbsp Flaked Almonds
    4 Arabic Khuboos Bread

      Prepare Saffron Stock In a sauce pan bring 300 ml of water to boil, add chicken aromata powder and mix well. Bring the flame to low ? medium and stir in saffron strands for 2 minutes. You will get the aroma of Saffron. Keep aside.


      Start with Aromatics for Fish Heat a non-sick pan on medium heat for 1 minute. Add the olive oil, onions and cook for 2 to 3 minutes Add ginger and green chilli to the pan and cook for 2 more minutes on medium heat.


      Add the Spices and Tomato Puree Now add the spice mix, tomato puree and stir for 2 minutes, until spices release aroma.


      Add Cherry Tomatoes and Saffron Stock Now add cheery tomatoes, ground almonds, orange zest and juice, honey and saffron-scented stock (prepared earlier). Reduce the heat to low-medium and simmer uncovered for 10 minutes. Tomatoes would have broken down and sauce would have become thickened a little.


      Add Fish to Sauce Add fish chunks to sauce, making sure that pieces are all nestled under the sauce. Cover with a lid and cook on one side for 3 minutes, then turn the fish and cook on the other side for 2 minutes (5 minutes in total) over low-medium heat. Add coriander, flaked almonds and switch off heat.


      For Final Serving To serve garnish cooked fish with green chilli and serve with Arabic Khuboos. Warm Khuboos for 2-3 minutes before serving.
