Gnocchi hails from the vibrant city of Bologna with curious "history". Legend has it that gnocchi was created as a tribute to Venus, the goddess of love. When Venus stayed in a tavern on the outskirts of the city, the inner keeper spied on her through the keyhole of her room, but could only catch a glimpse of her navel. Spellbound, he went to capture this vision, shaped it fresh into Gnocchi.

    1/2 Onion
    1/2 tbsp Garlic
    4 tbsp Capsicum
    1/2 large Courgette
    1 sprig of fresh rosemary
    150 gms Smoked Chicken
    1 tbsp Olive Oil
    1/4 tsp Chicken Aromat Powder
    1 egg
    90 ml fresh creme
    15 gms Parmesan for Egg Mixture
    15 gms Parmesan for Garnishing
    1/4 tsp Black Pepper
    1 Lemon
    Garlic Bread

      Boil Gnocchi To 6 cups (1.5 liter) of boiling water in a saucepan add Gnocchi and cook for about 2 minutes. Drain gnocchi and keep it aside for later use.


      Prepare Chicken Broth In the same saucepan used for Gnocchi bring 1/4 cup (60 ml) of water to boil, add chicken amorat powder and mix well. Keep aside for carbonara sauce.


      Prepare egg and cream mixture In a small bowl whisk the cream and egg together, and then add parmesan cheese. Mix together and keep aside for carbonara sauce


      Cook Aromatics for Carbonara Sauce Heat a non-stick pan for 1 minute over medium-high heat, add olive oil along with garlic and onion and saut? them for 2 minutes (Do not brown them). Add capsicum cubes, courgettes, salt (to taste), pepper and stir occasionally for 3 minutes.


      Add Smoked Chicken & Gnocchi Add chopped rosemary leaves and smoked chicken and cook for 3 minutes, tossing occasionally, then add boiled gnocchi and toss for 1-2 minutes. Add chicken broth and increase heat to high, reduce for 1 minute and remove from heat.


      Add the Egg & Cream mixture and Finish Off Quickly pour in the egg and cream mixture in smoked chicken pan, stir together until thickened, silky and evenly coated. Plate up with parmesan cheese and lemon juice (Half a lemon) You can add more pepper as per taste. Serve with Garlic Bread.
