Herbed Zucchini & Lemon Whole Wheat Spaghettiby Cook Gourmet

A simple heart healthy pasta dish where zucchini strands are tossed in garlic with garlic, red chili flakes, rosemary, sage and parmesan cheese. Use of lemon adds a tinge of tanginess to this awesome pasta recipe.

    200 gms Whole Wheat Spaghetti
    3 tbsp Olive Oil
    2 Medium Zucchini
    3 Garlic Cloves
    1.5 tsp Fresh Sage
    1.5 tsp Fresh Rosemary
    1/2 tsp Fennel Powder
    1/2 tsp Red chili Flakes
    1/4 tsp Black Pepper
    2 tbsp Parmesan Cheese
    2 tsp Parmesan Cheese for Garnishing
    4 tbsp Feta Cheese
    Zest of 1/2 Lemon
    1 Lemon
    1 Garlic Bread Loaf

      Cook Spaghetti In a 2 liter saucepan bring water to boil (water should be boiling and not warm). Add spaghetti pasta to it and cook for 8 to 10 minutes, till its is al dente, or firm to bite. Don't overcook the pasta as it will be cooked later with Zucchini. Drain the pasta and run under cold water, to prevent from further cooking.


      Cook Aromatics & Zucchini Bring olive oil to heat over low-medium heat on a non-stick pan. Add garlic and cook for 1 minute, until it is fragrant. Add zucchini and cook for 4 minutes over medium heat.


      Add Herbs & Spices to Zucchini Then add sage, rosemary, red chili flakes and fennel powder and cook for 1 minute more over medium heat, to allow the flavors to come together.


      Add Cooked Spaghetti Add cooked spaghetti to the non-stick pan containing zucchini and toss for 2 minutes, until spaghetti is coated with olive oil.


      Stir in the Cheese, Lemon Zest and Seasoning Add the parmesan cheese, feta cheese, lemon zest and black pepper, cook on medium heat for 1 minute. Add salt to taste carefully as feta cheese has salt. Switch off heat.


      For Final Serving Stir in juice of half a lemon. Divide the pasta among two serving plates and top with parmesan cheese. Serve with Garlic Bread.
