Irish Stew with Garlic Breadby Cook Gourmet

A traditional Irish stew would have mutton or lamb instead of beef. Mutton is the choice of stew as it has more flavors. We thought of giving this delicacy a twist and use vegetables, like carrots, turnips and mushrooms to bring the flavors of a traditional stew for a vegetarian option.

    2 tbsp Onions
    1.5 tbsp Flour
    1.25 tsp Vegetable Aromat Powder
    2 cups Mushrooms
    1/4 cup Carrots
    1/4 cup Turnips
    1/4 cup Soya Chunks
    1/4 cup Celery
    2 tbsp Split Red Lentils
    1/4 cup Parsley
    1 tbsp Soy Sauce
    1 Bay Leaf
    3/4 tsp Marmite yeast
    1/4 tsp Sugar
    Herb Mix (1/4 tsp Thyme, 1/4 tsp Rosemary, 1/4 tsp Majoram)
    1 tbsp Olive Oil
    Garlic Bread

      Prepare Vegetable Broth Bring 1.25 cups (300 ml) of water to boil and add vegetable aromat powder, mix well. Switch off heat and keep aside.


      Cook Aromatics for Stew In a casserole dish, heat olive oil over low flame. Cook onions along with 3 tbsp (45ml) of prepared vegetable broth for 1 minute. Add the flour and cook for 30 seconds.


      Stir in Carrots, Mushroom and Turnips Add the carrots, mushroom & turnips to the onion mixture and cook for 30 seconds on low flame.


      Add Remaining Ingredients Add soya chunks, celery, lentils, parsley, soy sauce, bay leaf, marmite yeast, sugar and herb mix. Season with salt and pepper to taste.


      Add Vegetable Broth, Simmer & Serve Add vegetable broth to the dish and bring to a boil. Now cover and bring heat to low, cook for 15 minutes, or until vegetables are done. Serve with warm garlic bread slices.
