Jamaican Jerk Chicken with Lemon Grass Riceby Cook Gourmet

Jerk refers to a way chicken is seasoned and cooked. This style comes from Jamaica. The typical cooking style uses a marinade or paste that includes at least pimento which is called allspice, and peppers. The chicken is then marinated and slow smoked over pimento wood. Pimentia or Pimento is a Spanish word for pepper and early European explorers mistook it for black pepper, so they call pimento.

      Marinate Chicken In a food processor or blender, combine green onions, onions, jalapeno, red bell peppers, soy sauce, vinegar, vegetable oil, brown sugar, thyme, cloves, nutmeg and all spice. Mix for 15-20 seconds into a coarse mixture. Place chicken in a bowl, and coat with marinade. Refrigerate for 50 minutes.


      For Lemon Grass Rice After chicken has marinated for 30 minutes start with lemon rice. Put rice along with lemon grass, lime leaves and ginger in to a sauce pan with 2 cups (480ml) of water over high heat, Leave the saucepan uncovered, stirring occasionally as water begins to boil Stir in the rice one more time, scraping the bottom and turn heat to low. Cover the saucepan and let it cook for 20 minutes. Remove the saucepan from the heat.


      Grill Marinated Chicken Preheat the nonstick pan over high heat for 2-3 minutes and lower the heat after skillet is hot. Add vegetable oil and add grill chicken from marinade mixture for 5-6 minutes each side, until juices run clear


      Reduce Chicken Marinade and Serve Pour over the remaining marinade mixture over grilled chicken and reduce for 2-3 minutes. Serve hot with lemon grass rice.
