Jamaican Jerk Veggies with Callaloo Riceby Cook Gourmet

Jerk is a style of cooking native to Jamaica in which meat is dry-rubbed or wet marinated with a very hot spice mixture called Jamaican Jerk spice. Jerk seasoning is traditionally applied to meat or prawns, our variation uses veggies that are served with native rice simmered in coconut milk to balance the flavors of a spicy veggies.

    For Marinade
    1/4 Cup Onion Chopped
    1/2 tsp Salt
    1/2 tsp Black Pepper
    2 tbsp Vinegar
    3 tbsp Vegetable Oil
    2 Bay Leaves
    2 garlic Cloves
    Spice Mix
    2 Bird Eye Chilis

    For Veggies
    1 tsp Ginger Chopped
    2 tsp Garlic Minced
    1/4 Cup Scallions Sliced
    100 gms Cottage Cheese
    100gms Sugar Snap Peas
    100 gms Carrots
    100gms Broccoli

    For Rice
    1 Cup Rice
    200 ml Coconut Milk
    1.5 tsp Garlic Minced
    3 Sprigs Thyme
    1 Scallion Chopped
    1 tbsp Butter
    1/2 tsp Salt
    1/2 tsp Black Pepper

      Prepare Marinade for Veggies In a blender / food processor, combine Onions, salt, black pepper, vinegar, vegetable oil, bay leaves, garlic cloves, spice mix, bird eye chilies with 3 tbsp (45 ml) of water. Blend to a smooth paste.

      Marinate Veggies In a bowl mix marinade with ginger, garlic, scallions, cottage cheese, sugar snap peas, carrots and broccoli. Keep aside for 5 minutes.

      Cook Callallo Rice While veggies marinate, in a saucepan over medium-high heat combine coconut milk, 1 cup (240 ml) water. Stir in garlic, thyme, scallions, butter, salt and black pepper. Bring mixture to a boil, this will take 3 minutes. Stir in the rice and reduce heat to low. Cover and cook for 10-12 minutes, or until liquid is absorbed and rice is cooked.

      Cook Marinated Veggies When veggies have marinated for 5 minutes, bring a non-stick pan to heat over medium-high flame, add the marinated veggies along with the marinate and cook for 4 minutes, until they have cooked through. Switch off heat

      For Final Serving Serve cooked veggies with rice.
