Japanese Buckwheat Soba Noodles with Broccoli, Mirin and Tamariby Cook Gourmet

Here we combine them rapine and tamari, mirin to give you a lip-smacking Japanese delicacy.

    150 gms Broccoli Flowerets
    240 gms Buckwheat Soba Noodles
    4 Garlic Cloves for Noodles
    2 Garlic Cloves for Tamari Mixture
    1 tbsp Ginger
    2 tbsp Sesame Oil for Rapine
    1 tbsp Sesame Oil for Tamari Mixture
    3 Scallions Sliced Thinly
    1/4 tsp Red Chili Flakes
    1/8 cup Tamari
    1/8 cup Mirin
    1 tsp Sesame Seeds
    1 Lime

      Boil Soba Noodles In a saucepan bring 2 liters of water to boil, add soba noodles and cook them for 3 to 4 minutes. Drain and rinse under cold water to prevent them from cooking further.

      Prepare Tamari Mixture While the noodles boil, in a medium sized bowl combine tamari, mirin, sesame oil and garlic. Keep aside.

      Cook Aromatics for Broccoli Bring a non-stick pan to heat over low-medium flame. Add sesame oil and garlic, ginger and saute for 1 minute.

      Stir in Scallions along with Spices Add scallions, red chili flakes and salt to taste, saute for 2 to 3 minutes over low-medium heat

      Add Broccoli to Aromatics Stir in the broccoli and mix well, cook broccoli stirring frequently until softened for 3 to 4 minutes on low-medium heat. Broccoli should not be over cooked and bright green color should remain.

      Add Tamari Mixture, Soba Noodles & Finish Off Add cooked soba noodles and tamari mixture to the broccoli. Cook for 1 minute. To serve garnish with sesame seeds and squeeze lime juice. Lime juice helps in neutralizing the dominant flavor of soba noodles.
