Johannesburg Peri Peri Chicken, Served with Coleslaw & French Friesby Cook Gourmet

In 1498 when the Portuguese explores sailed up to the east coast of Africa on their way to India, they discovered many wonderful things, the most wonderful thing they found was a small very unique strong tasting chili which the local people (who spoke Swahili) called Peri-Peri they used Peri-Peri as Medicine and also to enhance the flavor of their food. Peri-Peri chili is the secret to creating those tantalizing sauces that add those finishing touches to your succulent chicken.

    400 gms Chicken Marinated Chicken
    2 tbsp Vegetable Oil
    8 Bamboo Skewers

    1/4 Cup Peri Peri Sauce containing
    Bird eye chilies
    Red Bell Peppers
    Garlic
    Spice Mix(Oregano, Paprika Powder, Brown Sugar)
    Vegetable Oil
    White Wine Vinegar
    Salt

    For Coleslaw
    1/4 cup Cabbage Shredded
    1 Carrot Shredded
    1 Scallion, Finely Chopped
    1/4 cup Mayonnaise
    1 tbsp Apple Cider Vinegar
    1/2 tsp Dried Mustard Powder
    300 gms French Fries

      Transfer Marinated Chicken Transfer marinated chicken along with marinade to a large bowl.

      Thread Chicken in Skewers Thread in 3 marinated chicken pieces in each bamboo skewer. We would grill 4 skewers at a time.

      Grill Peri Peri Chicken In a non-stick heat oil on medium heat, place 4 bamboo skewers with chicken. Grill the chicken for 8-10 minutes on each side (16 to 20 minutes in total) over low-medium heat. Feel free to base it with more marinade as chicken cooks. Repeat the process for rest of the skewers.

      Prepare Coleslaw While the chicken is grilling, in a bowl mix cabbage, carrot, scallions along with mayonnaise, mustard powder and apple cider vinegar. Add salt and pepper to taste and mix well. Keep in the refrigerator and served chilled.

      Fry French Fries & Serve Heat Vegetable Oil in a frying pan, fry french fries until they are golden brown. You can fry them, as per the crispness you like. Serve grilled chicken with Coleslaw and French Fries and Peri Peri Sauce.
