Korean Kimchi Fried Riceby Cook Gourmet

We got addicted to this Korean dish on a last trip to Seoul, Korea roadside eatery. They used pork but this version of recipe is using Chicken. It's an awesome side for any Asian-Inspired meal, or on its own for lunch or dinner with a crisp salad.

    Peanut oil
    Sliced chicken breasts
    Sliced chicken sausage
    Ginger, thinly sliced
    Red chilly chopped
    Garlic cloves crushed
    Bean sprouts
    Egg
    Kimchi
    Scallions for rice
    Scallions for garnish
    Soy sauce
    Sesame oil

      Prepare Rice Take 3 cups (750 ml) of water in an open pan and bring water to the boil. When water has come to the boil stir in rice, along with pinch of salt and bring it back to a gentle simmer Cover the pan with a lid and cook for 12-15 minutes under low flame. Keep rice a little undone, as they would be cooked later with chicken and sausages. Drain excessive water and let them cool.

      Start with Chicken and Sausage mixture In a non-stick pan, heat peanut oil over medium-high heat. Add sliced chicken and saute for 2 minutes until tender. Add sausage and stir-fry over high heat for 1 minute. Add the ginger, red chilly and garlic, stir-fry until fragrant for 1 minute.

      Add Bean Sprouts and Egg Add the bean sprouts and stir-fry for 1 minute, then push the mixture to one side of the pan, Add the beaten egg to the other side of the pan and scramble just until set for 1 minute.

      Add Cooked Rice Add rice to the pan containing chicken and sausages and stir-fry over high heat until coated and hot for about 2 minutes.

      Add Kimchi, Soy Sauce to Fried Rice Add the kimchi, scallions, soy sauce and sesame oil and stir fry until hot, for 1-2 minutes. Spoon the fried rice into bowls, garnish with scallions and serve.
