Lebanese Pan Fried Fish with Pistachio & Tahini (Samke Harra)by Cook Gourmet

This much loved Lebanese fish delicacy is spectacularly presented on a large platter as part of a buffet. Most often reserved for special occasions, you need to head to the fish market and buy the freshest snapper for this recipe. Originally, this dish is baked whole fish but we have made a pan fried version for easy dinner experience.

INGREDIENTSPortion for 2

    300 gms Red Snapper
    4 tbsp Olive Oil
    1 Medium Onion
    1 Tomato
    2tbsp Red Bell Pepper
    4 tbsp Pistachio
    2 Lemons
    1/2 tsp Harissa
    1/4 cup Tahini
    4tbsp Parsley
    4 tbsp Coriander
    4 Arabic Khuboos Bread Slices

      Pan Fry Red Snapper Season red snapper with salt and pepper .On a non-stick pan heat olive oil on medium heat. Place red snapper in the pan and cook for 3 minutes each side (6 minutes in total). Remove from pan and keep aside

      Cook Aromatics for Fish Heat the same non-stick pan over medium heat, to it add onions and cook for 1 minute. Add tomatoes, red bell pepper and cook for 2 minutes until soft.

      Add Pistachio, Tahini & Harissa Add pistachio, lemon juice ( juice of 2 lemons), harissa, tahini and 1 cup water. Cook for 3 minutes on low heat, to make a thin sauce consistency and cook until oil separates from the sauce.

      Add Cooked Red Snapper to Sauce Add the red snapper to the sauce and coat it evenly for 30 seconds. Switch off heat, garnish with coriander and parsley. Serve with warm khuboos bread.
