Many years ago, a dear Italian woman introduced this dish in Italian village - Castemezzano; we would like to share this exotic recipe. It is delicious and easier to make than it looks.

INGREDIENTSPortion for 2

    For Lemon Butter Sauce
    1 tbsp white wine
    2 tbsp lemon juice
    2 tbsp cream
    1/3 cup butter

    For Chicken and Pasta
    200 gms farfalle pasta
    200 gms chicken breasts
    1 tsp olive oil
    2 tbsp butter
    1.25 tbsp flour
    1/4 cup mushrooms, sliced
    2 tbsp black olives halved
    15 gms artichoke
    1 tsp capers
    1 tsp parsley

      Boil Farfalle Pasta In a large saucepan bring 2 liters of water with 1 tsp of salt to boil. Add the pasta and cook for 12 minutes until it is done. Drain and keep aside

      Prepare Lemon Butter Sauce While pasta is boiling, In a saucepan, over medium heat pour the wine and lemon juice, cook for 2-3 minutes until liquid has reduced by 1/3. Stir in cream, and simmer until it thickens. Gradually add butter 1 tbsp at a time to the sauce, stirring until completely incorporated., this should take 3-4 minutes. Season with pepper and keep warm.

      Prepare Chicken Coating In a bowl, stir together flour, salt and pepper. Lightly coat the chicken flour mixture.

      Prepare Chicken In a non-stick pan heat olive oil and butter over medium heat. Carefully place coated chicken in hot oil and butter, fry for 3-4 minutes on each side until chicken is cooked through and golden brown on both sides. Remove chicken and drain on paper towel. When it has cooled down, cut chicken to bite-size strips

      Prepare Mushrooms and Artichokes In the same pan used for frying chicken, stir in mushrooms, artichokes, olives and capers and cook for 3-5 minutes until mushrooms are soft.

      Combine Chicken, Pasta and Sauce Add chicken to mushrooms and artichoke mixture and stir in farfalle pasta. Add lemon butter sauce into the mixture and toss for 1-2 minutes, and switch off heat To serve, place pasta in a large bowl and garnish with parsley.
