Lemony Conchiglie Pasta with Goat Cheese & Broccoliby Tejasvi Arneja

Conchiglie pasta is a shell-like Italian pasta shape which comes in a range of sizes, from tiny shells for soups to jumbo shells which can be stuffed and baked. In this recipe we combine this with Slightly broccoli and it , marries well with the tangy goat cheese and lemon zest.

    300 gms Broccoli
    4 tbsp Olive Oil
    4 Cloves Garlic Minced
    1 tsp Red Chilly Flakes
    1/2 tbsp Lemon Zest
    5 tbsp Goat Cheese
    1 tbsp Parsley
    1 Lemon
    1 Garlic Bread Loaf

      Blanch Broccoli Flowerets In a saucepan bring 2 liter of water to boil, add broccoli and cook for 2 minutes, drain and run under cold water. Keep aside.


      Cook Pasta In the same saucepan used for broccoli boil bring 2 liters of water to boil, add Conchiglie pasta and cook for 8 minutes until it?s done / al dente.


      Start with Aromatics for Broccoli In a non-stick add olive oil over low heat, add garlic and cook for 2 minutes until golden. Add chilly flakes and cook stirring frequently for 30 seconds.


      Add Broccoli to Aromatics Add blanched broccoli toss for 30 seconds


      Add Pasta to Broccoli & Finish Stir in the cooked pasta and toss it with broccoli for 30 seconds, so that pasta is coated with oil and garlic. Add lemon zest, parsley, lemon juice (half a lemon),salt and pepper to taste mix and switch off heat. Divide the pasta into two serving bowls, top with equal amount of goat cheese to each. Serve with warm garlic bread.
