Lettuce Wraps Stuffed with Chickenby Cook Gourmet

    1.5 tbsp Olive Oil
    1.5 tbsp Olive Oil
    400 gms Chicken Breasts
    1/2 Cup Water Chestnut
    1 cup Mushroom
    3 tbsp Onions
    1 tsp Garlic
    5 Iceberg Lettuce Leaves
    1/2 Cup Special Sauce
    1 Lemon

    For Stir Fry Sauce
    2 tbsp Soy Sauce
    2 tbsp Brown Sugar
    2 tsp Rice Wine Vinegar
    4 Bamboo Skewer Half Pieces

      Cook Chicken Remove chicken breasts from the packet and drain excess water. Season chicken breasts with salt & pepper to taste. Heat a non-stick pan on low-medium heat, add olive oil. Place the seasoned chicken breasts and cook for 5 minutes on one side, flip and cook for 4 minutes on the other side. (9 minutes in total). Chicken would be golden brown in colour. Switch off heat.

      Cut Chicken into Bite Size Pieces Allow the chicken to cool for 5 minutes and cut it into bite size (1-inch pieces).

      Prepare Stir Fry Sauce While the chicken cooks, in a small bowl combine soy sauce, brown sugar and rice vinegar. Mix well and keep aside.

      Cook Chicken with Chestnuts & Mushrooms Wipe clean the pan used for cooking chicken. Bring heat to high and add olive oil. Add garlic, onions and cook for 30 seconds. Add chicken pieces along with mushrooms and chestnut and cook for 1 minute.

      Add Stir Fry Sauce & Reduce Add stir fry sauce to chicken & chestnut mixture, bring heat to medium and cook for 2 to 3 minutes, until the sauce has reduced. Switch off heat.

      For Final Serving In a small bowl, squeeze lemon juice (half a lemon) into special sauce and mix well. Divide the chicken mixture into 4 parts and spoon them on 4 lettuce leaves. Spoon the special sauce on top. Close the lettuce leaves with bamboo skewers and form a wrap. Serve with the remaining special sauce on side.
