    1/2 cup Cubed Sweet Potato
    1/4 cup Cubed Eggplant
    1/4 cup Chopped Green Bell Pepper
    1/4 cup Chopped Red Bell Pepper
    1/2 cup Chopped Carrots
    1/2 Medium Onion Chopped
    2 tbsp Olive Oil for Vegetables
    2 tbsp Olive Oil for Curry
    1 tsp Garlic
    1/2 tsp Turmeric
    1 tsp Curry Powder
    1/4 tsp Cinnamon Powder
    1/4 tsp Red Chilly Powder
    3/4 cup Garbanzo Beans
    2 tbsp Almonds Blanched
    1/4 cup Chopped Zucchini
    1 tsp Raisins
    1 tsp Vegetable Stock Powder
    1/2 cup Orange Juice
    French Baguette

      Prepare Vegetable Broth In a saucepan bring 1 cup (240 ml) of water to boil, add vegetable stock powder and mix well. Switch off heat and keep aside.


      Saute Vegetables In a non-stick pan over medium heat add olive oil and fry garlic for 1 minute. Add sweet potato, eggplant, bell peppers (green and red), carrots and onions; saute for 5-7 minutes over medium heat. Keep aside.


      Start with Curry Preparation Clean the non-stick pan used for sauteing vegetables. To the pan add olive oil and and place turmeric, curry powder, cinnamon, salt and pepper and saute over medium heat for 2 minutes.


      Add Sauted Vegetables Add all the sauted vegetables along with garbanzo beans, almonds, zucchini, raisin, orange juice and vegetable broth and mix well for 1 minute.


      Cook Curry for 20 Minutes and Serve Cook the curry vey slow heat for 20 minutes, covered. Serve with French Baguette
