    For Cauliflower Steaks
    4 Cauliflower Slices
    2 tbsp Olive Oil
    Spice Mix (1.5 tsp Coriander, 1 tsp Cumin, 1/2 tsp Cinnamon, 1.5 tsp Paprika)
    2 tbsp Chopped Parley

    For Couscous
    1 tbsp Butter
    1/2 Large Onion Sliced
    2 Garlic Cloves Chopped
    1 Cup Couscous
    1/2 tsp Veg Aromata Powder
    1 tbsp Chopped Mint
    1 tbsp Chopped Parsley

    For Lemon Tahini Sauce
    Juice of 2 Lemons
    2 tbsp Tahini
    2 tbsp Yogurt

      Prepare Vegetable Stock In a saucepan bring 240 ml (1 cup) of water to boil, add vegetable aromata powder and mix well. Switch off heat and keep aside


      Marinate Cauliflower Slices In a bowl mix olive oil, spice mix, salt and pepper to taste parsley along with cauliflower slices.


      Pan Sear Cauliflower Slices On a non-stick pan place 2 cauliflower steaks at a time, cook the cauliflower steaks on medium heat for 2 to 3 minutes each side, till the juices are dried. Repeat the same for 2 other cauliflower slices.


      Caramelize Onions for Couscous While the cauliflower is cooking, in a separate saucepan heat butter and then add onion slices. Cook on low-medium heat for 5 minutes until onion slices are golden. Then add garlic and stir for 30 seconds.


      Add Veg Stock and Couscous to Onions Pour vegetable stock (prepared earlier) and salt to taste and increase heat to high, bring to a boil. Add the couscous, stir and turn off heat. Cover the saucepan and let it sit for 8 minutes, water would have been absorbed by now. Gently fluff couscous with a fork and stir in parsley and mint.


      Prepare Lemon Tahini sauce & Serve In a small bowl, whisk together tahini, yogurt, lemon juice (2 lemons), along with 4 tbsp (60 ml) water and salt to taste until well combined. To serve, divide couscous over the two plates. Place 2 cauliflower steaks on each plate. Serve lemon tahini sauce on side.
