Mushroom Stroganoff with Herbed Riceby Tejasvi Arneja

INGREDIENTSPortion for 2

    For Stroganoff
    3 tbsp Olive Oil
    2 Onions
    2 tsp Paprika Powder
    4 Garlic Cloves
    600 gms Mushroom
    1.25 tsp Vegetable Aromata Powder
    2 tbsp Worcestershire Sauce
    6 tbsp Sour Cream
    4 tbsp White Wine
    4 tbsp Parsley

    For Herbed Rice
    1 Cup Rice
    1 tbsp Butter
    1/2 tbsp Thyme Chopped
    2 tsp Chives

      Prepare Vegetable Stock In a saucepan bring 300 ml (1.25 cup) of water to a boil. Add vegetable aromata powder and mix well. Switch off heat and keep aside.

      Prepare Herbed Rice Rinse off rice under water to remove starch. Take 3 cups (750 ml) of water in an open pan and bring water to the boil. When water has come to the boil stir in rice, along with salt and bring it back to a gentle simmer Cover the pan with a lid and cook for 12-15 minutes under low flame. Drain excess water. While the rice is hot add butter, thyme and chives. Mix them together

      Start with Mushroom Stroganoff While the rice cooks, heat olive oil in a non-stick pan, add onions, cook over low-medium heat for 5 minutes until they soften. Add garlic and paprika, then cook for 1 minute.

      Add Mushrooms to Stroganoff Add the mushrooms and increase heat to medium-high and cook for 5 minutes, stirring constantly. Season with salt and pepper to taste.

      Add Stock, Wine & Worcestershire Sauce Add the vegetable stock, Worcestershire sauce and white wine. Bring this to a boil by turning heat to high for 5 minutes, until the sauce thickens.

      Stir in Sour Cream and Serve Turn off the heat and add sour cream and parsley. Mix them well. Serve stroganoff with herbed rice.
