INGREDIENTSPortion for 2

    250 gms Prawns

    For Marinade
    1 tsp Nutmeg Powder
    1.5 tsp Soy Sauce
    2 Garlic Cloves Minced
    1 tsp Ginger Grated
    1 tsp West Indian Pepper Sauce
    1/2 tsp Mixed Spice
    2 tbsp Vegetable Oil

    For Oil Down
    1 tbsp Vegetable Oil
    1 tbsp Butter
    2 Garlic Cloves
    1 Scallion
    300 gms Boiled Potatoes
    200 ml Coconut Milk
    Spice Mix
    1/2 tsp West Indian Pepper Sauce
    100 gms French Beans
    1 tbsp Coriander
    2 sprigs Fresh Thyme
    4 Bamboo Skewers

      Marinate Prawns In a bowl mix vegetable oil, soy sauce, nutmeg powder, spice mix, garlic, ginger and salt and pepper to taste. Add the prawns, mix well to coat in the marinade and set aside. Soak the skewers in water, this will stop them from burning while coking prawns.

      Blanch Beans In a saucepan bring 1 liter of water to boil and cook french beans for 1 minute. Drain and run under cold water.

      Start with Spice Oil Down Heat a non-stick pan over low-medium heat. Add vegetable oil and butter, when melted throw in the onion and cook for 2 minutes, then add garlic and cook for 1 minute

      Add Boiled Potatoes, Coconut Milk & Beans Now add the boiled potatoes, season with pepper sauce, and spice mix. Add coconut milk and bring to a boil, cook for 1 minute more. Add salt and pepper to taste. Add french beans along with fresh thyme and coriander. Stir for 30 seconds and switch off heat. Transfer oil down to a serving dish.

      Skew the Prawns in Bamboo Skewers Skewer the prawns into bamboo skewers (3 on each skewers)

      Pan Sear Prawns & Serve Wipe clean the non-stick pan used to make oil down. Heat the non-stick pan on low ? medium heat and put the prawns with skewers on it. Cook for 2 minutes on each side (4 minutes in total) To serve divide the oil down into two serving dishes and place 2 prawn skewers on each dish.
