Roasted Chestnut and Herb Pesto Pasta with Mushroomsby Cook Gourmet

INGREDIENTSPortion for 2

    30 gms Chestnuts
    1.5 cup Mixed Herbs (1/2 cup each of Basil, Parley & Mint)
    20 gms Parmesan Cheese for Pesto
    2 tsp Parmesan Cheese for Garnish
    2 Garlic Cloves
    3 tbsp Olive Oil for Pesto
    1 tbsp Olive Oil
    300 gms Farfalle Pasta
    150 gms Mushrooms
    1/4 cup Cream
    1 tsp Red Chili Flakes
    Garlic Bread Slices

      Cook Pasta In a saucepan bring 2 liters of water to boil, add a 1/4 tsp of salt and add pasta. Cook for 9 minutes until it is al dente or firm to bite. Drain it under running water.

      Prepare Pesto While pasta cooks, in a blender put chestnuts, along with mixed herbs, parmesan cheese and garlic and pulse until chopped (it should not be too fine). Transfer to a bowl, slowly pour in the olive oil from top, mix well and season with salt and pepper to taste.

      Start with Mushrooms On a non-stick pan heat olive oil over low flame, add mushrooms and cook for 3 to 4 minutes. Add salt and pepper to taste. The mushrooms will turn tender and start to brown.

      Add Pesto & Creme Add pesto, creme and cook for 1 minute till cr?me reduces on low flame

      Add Pasta along with Chili Flakes Stir in the cooked pasta, mix well so that pasta is naped with pesto and cr?me, for 1 minute. Season with chili flakes. Garnish with parmesan cheese and serve with warm garlic bread slices.
