    For Grilled Chicken
    4 chicken breasts, 100 gms each
    1 tsp Dijon mustard
    1 tsp chopped garlic
    1 tbsp chopped green onion
    2 tbsp olive oil for marinade
    1 tbsp olive oil for grilling
    2 rosemary sprigs for marinade
    1 rosemary sprig for grilling
    Zest of 1 Lemon
    Juice of 1 Lemon
    1/2 tsp black pepper

    For Arugula Salad
    2 cups Arugula leaves
    1/ 2 cup cherry tomato
    2 tbsp cooked corn kernels
    1/2 tbsp olive oil
    Juice of one lemon
    Half orange segments
    1/4 tsp black pepper powder

      Marinate Chicken for 30 minutes In a blender add Dijon mustard, garlic, green onions, olive oil, rosemary sprigs (use only leaf, save stems for grilling), lemon juice, lemon zest (grate outer lemon skin), salt and black pepper and blend through a fine paste. Marinade chicken breasts with marinade mixture and refrigerate for 30 minutes.

      Grill Chicken On a medium heat in a heavy bottom pan add olive oil and throw rosemary stems and sprigs. Place marinated chicken breasts over rosemary stems and sprigs Cook both side for 7-10 minutes each till chicken is well cooked. To check if chicken is cooked, pierce a tooth pick into chicken breast more than half way through and juices would run clear.

      Prepare Arugula Salad and Serve In a bowl add arugula leaves, cherry tomatoes, cooked corn kernels, half orange segments, olive oil, lemon juice, salt and pepper. Mix them well Dish out grilled chicken, spoon over grilled juices from frying pan. Serve arugula salad along with grilled chicken
