Sesame Noodles with Cucumber, Bok Choy, and Mixed Greensby Cook Gourmet

These noodles are made from buckwheat flour and have a corresponding strong and nutty flavor. Many buckwheat noodles have some wheat flour in them, which means they are not gluten free. However, pure buckwheat soba can be found - It's stronger in flavor and really delicious, and gluten-free. We generally find dried soba noodles in packets, but keep your eyes open for fresh soba at Asian Markets. Dried soba look like flat spaghetti and is usually light beige to dark brown-gray in color.     3/4 cup Orange Juice
    1/4 cup Peanut Butter
    2 tbsp Rice Vinegar
    2 tbsp Chopped Ginger
    1 tbsp Orange Peel
    1 tbsp Soy Sauce
    2 Garlic Cloves
    1.5 tbsp Lime Peel
    1 tbsp Chopped Red Bell Peppers
    1/3 cup Canola Oil

    For Noodles
    200 gms Soba Noodles
    2 tsp Chopped Red Bell Peppers
    1 tsp Sesame Oil
    3 cups Baby Greens
    2 heads of Bok Choy
    1 Cucumber
    1/3 cup Cilantro
    2 tbsp Chopped Mint
    Roasted Peanuts
    1 tbsp Chopped Coriander
    2 Lime Wedges

      Prepare Noodle Dressing In a blender add orange juice, peanut butter, rice vinegar, lime juice, ginger, orange peel, soy sauce, garlic cloves, lime peel and red bell peppers and puree until mixture is smooth While the blender is running add canola oil gradually. Season with salt and pepper

      Boil Soba Noodles In a large saucepan add 1.5 liters of water and 1 tsp salt. Bring water to a boil, add soba noodles and cook for about 5-6 minutes, until they are tender but still firm to bite. Remember noodles will also be cooked while we mix them with veggies later To stop noodles from cooking further, rinse them with cold water; drain well. Drizzle noodles in strainer with sesame oil and toss to coat evenly.

      Cook Soba Noodles with Greens In a large non-stick pot / kadhai over medium high heat add boiled noodles, baby greens, bok choy, cucumber, cilantro and mint. Saute for 2-3 minutes.

      Add Noodle Dressing Add noodle dressing, red bell peppers and toss to coat for 1 minute. Season with salt and pepper and switch off heat.

      For Final Serving Garnish with cilantro sprigs and crushed peanuts
