    400 gms Chicken Breasts
    2 tbsp Fish Sauce
    1 tbsp Soy Sauce
    1/4 cup Broccoli Flowerets
    1/4 cup Mushrooms Sliced
    Juice - half a lemon
    1 tsp Chopped Galingale
    1 tsp Sugar
    2 tbsp Vegetable Oil
    1/2 Onion
    3 Red Chilies
    3 cloves Garlic Minced
    3/4 cup Basil Leaves
    1 cup rice

      Marinate Chicken In a medium bowl, combine chicken with fish sauce, soy sauce, 1 tbsp water, and sugar; Marinate the chicken and refrigerate for 30 minutes.

      Cook Steamed Rice While chicken marinates, start with rice by rinsing off under water to remove starch Take 3 cups (750 ml) of water in an open pan and bring water to the boil. When water has come to the boil stir in rice, along with salt and bring it back to a gentle simmer Cover the pan with a lid and cook for 12-15 minutes under low flame. Drain excess water.

      Blanch Broccoli Flowerets In a saucepan bring 1 liter of water to boil, add broccoli flowerets for 2 minutes. Drain and wash under cold water to stop the cooking process.

      Prepare Onion Mixture for Chicken In a non-Stick Pan, heat vegetable oil over medium-high heat. Add galangal, onion and cook stirring for 2 minutes. Stir in the red chilies, garlic; cook for 1 minute.

      Add Marinated Chicken Remove chicken pieces from marinade and add it to the onion mixture. Cook for 5 to 6 minutes on medium heat.

      Add Broccoli and Mushrooms to Chicken Add blanched broccoli flowerets and mushrooms stirring for about 3 minutes. Add the remaining marinade, lemon juice (half a lemon) and cook for 2 minutes. Remove from heat and stir in basil. Serve hot with steamed rice.
