    For Meatballs
    300 gms Ground Chicken
    1/2 Green Onions Chopped
    1 tsp Chopped Galingale
    1 tsp Chopped Garlic
    2 tbsp Breadcrumbs

    For Red Coconut Curry
    2 tsp Chopped Garlic
    1/2 Green Onions sliced
    1 Lemon Grass Stalk sliced
    4 Kaffir Lime Leaves
    200 gms Baby Bok Choy
    2 tbsp Chopped Coriander
    4 Bird Chilies crushed
    2 tbsp Red Curry Paste
    2 tsp Galingale chopped
    1 tsp Sugar
    1 Lime
    400 ml Coconut Milk
    2 tbsp Olive Oil

    200 gms Rice Noodles

      Prepare Chicken Meatballs In a large bowl combine ground chicken, breadcrumbs, green onions, coriander, galingale, garlic, salt and pepper to taste Mix gently to combine, and form the mixture into 12 equal-sized balls.


      Pan Sear Chicken Meatballs In a non-stick pan heat olive oil, on low-medium heat until warm for 1 minute. Add the meatballs and cook heat to medium. Stir occasionally for 8 minutes, until they are browned. Transfer the meatballs to a plate and set aside. Leave the remaining oil and drippings in the non-stick pan.


      Start with Red Coconut Curry Heat the non-stick pan with remaining oil on medium heat until hot. Add garlic, galingale, crushed kaffir lime leaves, lemon grass and green onions. Cook stirring for 1 minute until fragrant Add red curry paste, cooking stirring for 30 seconds; then add lime zest, coconut milk, sugar and bird chilies. Cook stirring for 5 minutes.


      Add Chicken Meatballs and Bok Choy Add the meatballs and bok choy; season with salt and pepper. Cook for 5 minutes, or until meatballs are cooked through and bok choy has wilted. Remove from heat and stir in juice of 1 lemon.


      Boil Rice Noodles While the meatballs finish cooking, in a saucepan bring 2 liters of water to boil, add rice noodles to boiling water. Cook for 4 to 6 minutes or until tender, drain thoroughly.


      Plate your Dish To plate your dish, divide the cooked noodles and coconut curry and meatballs between 2 dishes. Garnish with coriander.
