Tunisian Spinach Rice with Maraqat Al Safarjal (Ragout of Lamb & Apple)by Cook Gourmet

    For Rice
    3/4 cup Rice
    2 tbsp Olive Oil
    3 tbsp Tomato Paste
    250 gms Spinach Chopped
    1 cup Parsley Chopped
    1/2 cup Onions Chopped
    1 tbsp Garlic Chopped
    1 Medium Potato Chopped
    1 Medium Tomato Chopped
    1/2 Carrot Chopped
    1/2 Cup Boiled Chickpeas
    1 tsp Coriander Powder
    1 tbsp Paprika Powder
    1/4 tsp Chili Flakes
    3/4 tsp Turmeric Powder

    For Maraqat Al Safarjal
    300 gms Lamb Cubed
    1/2 tsp Cinnamon Powder
    1/4 tsp Rose Water
    3 tbsp Olive Oil
    250 gms Apples

      Prepare Rice Ingredients Rinse the rice well. Drain the water and place rice in a large bowl. Add olive oil and tomato paste; mix well. Now add chopped spinach, chopped parsley, onion, garlic, potatoes, tomatoes, carrots, chick peas, coriander powder, paprika powder, chili flakes, turmeric powder and salt to taste. Mix everything together.

      Prepare Steamer for Rice Pour the mixture into top of a large steamer or a colander and place on top of 1 inch of boiling water in larger pot. Make sure that top of water is not touching bottom of steamer or colander.

      Steam Rice Mixture Cover the steamer / colander with a lid and allow the whole thing to steam for 20 minutes on medium heat. After 20 minutes, mix rice well. Cook rice mixture for another 10 minutes, and check if it has cooked to perfection. In case it?s undone cook for another 5 minutes.

      Brown the Lamb for Maraqat Al Safarjal While rice cooks, in a bowl mix lamb pieces with cinnamon powder, rose water and salt to taste. In a medium size non-stick pan heat olive oil over medium-high heat and brown the lamb, about 2 minutes, stirring.

      Add Apple and Water to Lamb Add apples and 1 cup (240 ml) of water, and bring to boil. You can add more water, remember that apples and lamb should be completely covered.

      Finish Maraqat Al Safarjal Reduce heat to medium-low and cook for 30 minutes with a covered lid. Check after 30 minutes, in case lamb is undone you can cook for intervals of 5 minutes checking if lamb has been done. Remove to a serving plate and serve with spinach rice
